Here’s a confession: As the days get colder and grayer, I find it harder to eat salads 🥗 and cold veggies. That’s when I start mixing warm, roasted veggies in with my greens. I'll be the first to admit that the finished result looks a bit 💩 but I can assure you it tastes good. This is a really super simple cheap soup to make which is so filling and full of fibre and protein! Definitely worth a try. I made a huge batch I'm working my way through. Lentil soup! . . . 1 onion 3 cups chopped carrot 1 tbsp cumin 3tspn chilli flakes 440 ml stock (add more if needed) with 2 stock cubes 2 cups brown lentils (you can use whatever lentils you want really, I just had a load I needed to use up) . . . Cook onion and cumin until soft, add chilli flakes and carrots for a further 5 min, add stock and lentils and bring to boil and then simmer until lentils are soft. You might want to add more stock and water. Season, blend and voila! . . . Although my feed has lots of pictures of meals with meat, I am really not eating meat all the time. I am vegetable/seafood kind of person. This is one of my simple and wholesome lunches that are easy to prepare, low cost, and very delicious. Turmeric couscous, sautéed mushrooms, toasted chickpeas, and a hardboiled egg. I also like having an orange, or an apple, or some berries on the side as a treat. (Sometimes I sneak a gluten free brownie to snack with my tea or decaf latte - with plant based milk only) In the past year I reduced my red meat consumption drastically compare to the diet I have grew up eating and I have not felt better in a long time. And the funny thing is, it is so easy to get used to good stuff (I think). When I crave fast food, my go to burger now is a quinoa burger. I think we all know very well that moment when you look in your fridge and what do you see? 👉🏼Old leftovers, condiments and maybe a few veggies that are showing their age. Don’t worry! 🗃 Save this recipe for this yummy 🥥Coconut Turmeric soup for when that happens. This is the perfect meal for when you need to use some of your staples from the pantry and use up some of those veggies going bad in that bottom drawer of your fridge. Not only that, it’s a great addition for cold/flu season 🤧 with its anti-inflammatory and immunity-boosting ingredients.🙌🏻 . 🍲Turmeric Coconut soup: Ingredients: 1 onion 3 cloves garlic Grated fresh ginger 2Tbsp oil 1/2 tbsp turmeric 1/2 tsp cumin Pinch crushed red pepper 3-4 carrots 4-5 celery stalks 1 can garbanzo beans 3 C vegetable broth 1 can coconut milk Salt to taste ⠀⠀ 🔸Dice onion, celery and carrot, mince garlic and set aside. 🔸heat oil in soup pot then add onion, minced garlic and then grate the ginger into the pot. 🔸when onions are translucent, add turmeric, cumin and red pepper flakes. Sauté for about a minute. Add carrots and celery until they start to soften. 🔸 add veggie broth and garbanzo beans and bring to a boil. Turn down heat and let simmer. Once it has simmered for a few minutes add coconut milk. Add salt to taste. 🔶 This tasty soup pairs well with some leftover cooked rice or quinoa. Also would go good with some white beans or some plain pasta. Top with fresh cilantro and limes. 👌🏼 *feel free to sub other veggies that you have on hand and you need to use before they go bad. Squash, mushrooms, cabbage, broccoli or cauliflower or asparagus, sweet potatoes, white potatoes etc. use other herbs that you have that may be wilting or browning like parsley or rosemary.

Today, I brought a mug of peach tea and a bag of sugar snap peas to my volunteer job. When break time came & everyone wanted coffee and muffins, I sipped my tea in a coffee mug. Then I brought out my bag of sugar snap peas and shared! Most people said “no”. But several thoroughly enjoyed the crunch and the natural sweetness. And not a single soul asked me why I wasn’t enjoying a muffin. Or coffee. It was just another day. If you want to keep your willpower up, bring healthy food to share. I’m a little obsessed with this quick and simple Choc Hazelnut Rocky Road Fudge! Give the gift of a nourishing platter when friends drop by ‘on the third day of Christmas’ 🎶 with my quick sticks festive hummus and homemade flax crackers. Is there anything better than a bit of ‘chip and dip’ after all? Ok so the hummus takes 5 mins but you might want to make a batch of these yum as crackers in advance. The hummus is pretty in pink with the addition of @melrosehealth essential reds powder giving a subtle beetroot flavour and a little swirl of flax oil to finish. I use canned chickpeas and add the chickpea brine to the hummus for extra creaminess without using yoghurt and of course tahini too. This is going to be my go-to spot for food in Connecticut. Waaaaow. So good. I would come here every single day if I could. Literally a dream. Everything is vegan, and they had a whole bunch of GF options too. Plus, the potion sizes were perfect! I love being able to just order my food without having to worry about making modifications & hoping they get it right. Tofu wrap with kimchi, yhogurt and siracha. Hmmmmmmmpppffff I can't get enough, I have a problem . . . Simply grill some tofu for about 5 mins each side, I then make a mix of yhogurt and cucumber with some salt and pepper, add that to the wrap with some kimchi (I would bathe in kimchi if I could) add the cooked tofu and if you're feeling spicy some cornflakes for some crunch! Then some siracha, roll and go. This classic potato salad is the one I grew up on, but now I make it in a veganised version! 😁 . . The mayonnaise I made to add to the potato salad is so good that everone should try, so here it is: VEGAN DILL MAYONNAISE . . - 2 cups of raw sunflower seeds (soaked for 1 hour in hot water and rinsed) - 3 garlic cloves - 1/2 cup of fresh dill - 1 tablespoon of lime juice - 1 cup of sunflower oil (or olive oil) - 1 tablespoon white wine vinegar - 2 pinches of salt - 1 cup of water (use only 1/2 cup of water for a thicker mayo) . . Instructions: . - Soak the sunflower seeds in hot water for at least 1 hour. Then rinse well. - Add sunflower seeds to a blender with lime juice, vinegar, chopped garlic cloves, fresh dill and salt. DO NOT add any oil yet. - Start off by adding 1/4 cup of water and blending the seeds until smooth using a medium-high speed. Add "up to" another 1/4 cup water if needed to get a smooth sunflower cream. - With the blender on at a medium speed, very slowly drizzle the oil in. - After very slowly drizzling in the cup of oil you will end up with a thicker cream like mayo (I prefer to add a bit more water to use this mayo in the potato salad). Keep refrigerated. . . ENJOY!! 👌

Here’s a super easy quinoa bowl that uses all the leftovers and comes together so quickly. . I cooked the quinoa in broth to give it some extra flavor and chopped some veggies I had on hand to mix in. . It was a happy bowl with cucumbers, cherry tomatoes, green onions and of course some avocado for healthy fats. 🥒🍅🥑 . You can add a dressing or eat it as is.
